Abstract
Physico-chemical properties of raw materials have been defined. Studies on the influence of different factors on the process of extraction have been done. Dependences on the temperature of the process have been established. With the purpose of intensification of the extraction process the treatment with enzyme preparations Fructozym P6L at the concentration of 0.05 % and the duration of 120–150 minutes is proposed.Keywords
